I am a British citizen and my canadian wife and I applied for an outside of Canada spousal sponsorship application (I am currently here on a 2 year work Visa in Canada).
I have just recieved my letter for biometrics and am a bit confused about where I go, as I am in Canada.
It states: Note: If you received this letter you must give your biometrics before coming to Canada and are not
eligible to have your fingerprints and photograph taken at a Canadian port of entry. If you are already
in Canada, you will have to leave the country to provide your biometrics.
Does this mean despite my current status in Canada I still have to leave the country to get my biometrics? Does anyone know if I am eligible to go to the United states to get my biometrics done, as Seattle is the closest office in the US.
Yes, you do have to leave to give biometrics. You should be fine to do your biometrics in the States, as long as you're otherwise admissible (no criminal convictions, not trying to bring illegal stuff across the border, etc.). You can do them at any biometric collection service point (except for ports of entry, since those are exclusively for folks getting their work or study visa, not PR applicants)
Also, book your appointment at the Seattle office soon, the earliest I could get an appointment for was two weeks out when I got my biometrics request.

I thought there was an exemption in place for people residing in Canada, as it is often unfeasible to leave the country. Or does that only apply for inland applicants?
