Just print the same biometrics letter and take that to VFS. Shouldn't matter if it's 'expired'.

(BTW I think VFS is wrong about this - these letters don't 'expire' - but no sense wasting time arguing with them.)

The question was, how long ago did the letter expire, or when was the letter dated? If it was one year ago the situation is different than 31 days.
I repeat: there is no reason that VFS can't accept a recently-expired one, happens all the time. But contact the embassy or visa office now anyway.

Well, I think VFS should take the existing letter, and it would have been better if you'd advised the Embassy/Visa office of the delay with the one kid (but perhaps you did).
That said: contact the embassy, explain circumstances as best you can, and that VFS will not take the existing biometrics letter. Do not wait for the embassy to do this for you.
As far as I'm aware IRCC is not tremendously strict about these biometric deadlines, although they can of course just decide an application has been abandoned.
Now: if this is NOT family sponsorship, post in the appropriate forum (refugees/asylum or whatever). Just having a family doesn't make it family sponsorship.
