Hi,
I received bank letter and statements but they are all in black and white. Is it going to make a problem? (It actually looks to me it was originally in color but they send a black-white copy) I asked the bank for color version but they told me it is only issued in black and white. any suggestion?

In my opinion the sign and stamp should be in colour although rest of it is b&w.

everything is in black and white other than my own signature
Doesn't matter, there is no requirement to have bank statements in colour.
to be safe I will write in LOE that I asked them in color but they said it is only black and white. One question: Can I attach the email exchange to LOE? or should I attach it it to bank letter?

What color do you expect the bank statement to be in the first place? Up to you, but totally unnecessary. If the statements are in original form, be it colored or b/w then you have nothing to worry about.

I am not sure if it is original Bank say it is but the quality is wired.

Then you gotta trust that bank and if you don't, you can request for a new one, a better one perhaps. Maybe they have poor paper/printing quality, and that's the best they have. You can attach whatever you feel like is necessary to support your case.
