You must be on legal status in France to apply for Canadian visa. Processing time is 10 days.
Purpose of visit - invitation letter if you are visiting family or friends. Bank Statement, Passport & Photos will be required. Please check following link for other requirements

If you are Citizen of France you need to fill up only ETA

If its legal to work in France on Italian work permit than you are legal and you can apply from France.

Whats are the timings .

And whrn i apply online how can i choose paris as to give biometrics?

Do not buy a ticket in advance. Given that you are a Srilankan national on a work permit as a cook in Europe, your chances to get TRV are not very good.
