Does anyone have an idea how long is it taking for appeal hearing dates in Toronto? It is for a spousal sponsorship. I have heard the entire process can take two years.

depends if they think you are eligble for an ADR meeting....but regardless usually a minimum of 6 to 8 months to get a date for either one... and then almost the same time again for a full appeal and the ADR date is somewhat faster....
