I got an interview for spousal sponsorship and my girlfriend decided that she is not going to do it anymore because she does not want to sign a document that she has to be responsible for my finances for the next 3 years. However, I also have another application in for Canadian experience class under express entry. If I cancelled the sponsorship, would it be affect my Canadian experience class application?

also I am on a work permit and I only got it because of the sponsorship so are they going to cancel it if i cancel the Sponsoship

You have an OWP through inland spousal sponsorship? From what I've seen on forums the OWP is valid for whenever it states regardless of the PR application.... Others have had their PR rejected yet continued working on their OWP

Yes I do have an OWP for the next 2 years. I am so close with my Canadian experience class application, Medical and background passed, just waiting on the final decision. Should I notify CIC about the situation and cancel the application or delayed the interview so i can get more time to wait for my CEC?

If your partner is not willing to sponsor you anymore then cancel the application. Your OWP will still be valid for its stated validity.... however, your partner will have already signed the undertaking when you submitted the application so shes has to contact CIC to remove that consent

The undertaking only goes into effect if the applicant actually lands as a PR, so the sponsor doesn't need to "remove that consent".

So the reason for withdrawal. Should I explained my entire situation in details about what led up to her wanting to cancel the application or I make it simple.( The reason for withdrawal is that my girlfriend no longer wants to be a sponsor to my application)

I am not sure they are really interested in the details of your personal story, since you are withdrawing it and not the other way around. You explanation:
