Walk in - Depends on discretion of BLS staff. You should take all originals but mostly cancelled indian passport or surrender certificate is retained. This is based on experience read in the forum
Postal - No originals need to be sent
In both cases you need self attested copies to be submitted with application. Hope this helps
For Ottawa applicants, I wonder if the OCI is printed in India and physically sent to Ottawa by mail. For most Toronto applicants, I see that the processed, dispatched and received date are all the same. Here I see processed on June 24, Dispatched on June 27 and no date for received in Ottawa. Thoughts fellow applicants?
I did walk-in for my child's OCI. BLS kept the Original Birth-Certificate(Long Form) saying Consulate will verify the document and will return it within 2-3 weeks.
BLS will verify original passports and will return it to you on the counter.

Just to update, my wife has status "Passport ready For Collection after OCI stamping " on BLS. Notes also including the tracking# of the return envelope we included in the package.
Mine is still showing "Under processing at Consulate General".
On a funny note, this journey (starting from PR application --> OCI completion) has taught me that patience is such an important quality. This forum is so helpful, but every time someone else status goes ahead we tend to wonder why mine is still stuck.
Now my wife and myself send OCI apps together, but wife has "Passport ready For Collection after OCI stamping" since Friday and I am stuck in "Processing at Consulate General"
